A recipe that uses coconut flour requires only a minimal amount of the flour, but more than the usual amount of eggs and liquid. Once you know the tricks to working with this quirky gluten-free flour, you will be able to use it to make just about all of your favorite recipes. In this class you will learn the nutritional value of coconut flour, as well ways to incorporate it into your diet through baking. You will learn how to create delicious but healthy cakes, quick breads, crepes, and more using coconut flour by itself, or in combination with other nutritious grain-free flours. You will get to sample coconut flour crepes, coconut flour cupcakes, and other exciting coconut flour creations.

From this demonstration, learn how to use Amaranth as a rice substitute, and how to use amaranth flour to create healthy gluten-free baked goods.
Upcoming Class: Making Gluten-Free Pasta (March 23rd, in Austin)
Calling all novice and experienced pasta makers! In this hands-on pasta making class, we will experience the texture and flavor profiles of various gluten-free, grain-free flours. We will earn how to use these flours to create pasta that, rather than being merely a neutral carrier for a sauce, actually adds depth and complexity to the dish in which it appears. We will easily create such rich, delectable gluten-free, grain-free pastas as chestnut flour fettuccini, mesquite flour ravioli,.and more. With so many varieties of gluten-free flours available to use in pasta dough, once you learn the basic steps of pasta-making, you will be able to produce amazingly creative pasta dishes. Everyone in the class will have a chance to use the pasta machine, and will receive a handout with notes from the class. We will sample such pasta dishes, among other flavorful pasta dishes, such as mesquite flour dessert ravioli stuffed with Mexican chocolate ganache.
