Tender, flaky pie gluten-free pie crusts and pastry are possible to make; they are even easy to make. Moreover, gluten-free pie crusts, freed from the constraints of commonly used all-purpose flour, can be deliciously and wonderfully creative. Learn to take advantage of various gluten-free flours to make unusual crusts that add a touch of complexity to your pies and make them pop with flavor! This class is hands-on. Each class participant will make and decorate her own individual size gluten-free pie to take home and bake. Each class participant will also receive a handout with class notes, resources, and recipes.
*The crusts we make and sample in class will contain tree nuts and eggs.

Gluten-Free Pasta-Making Class
Give your pasta equal billing with sauce that tops it! In this hands-on pasta making class, we will explore the texture and flavor profiles of various gluten-free, grain-free flours. We will learn how to use these flours to create pasta that, rather than being merely a neutral carrier for a sauce, actually adds depth and complexity to the dish in which it appears. We will create rich, delectable gluten-free pastas using flavor flours such as chestnut, sweet potato, and mesquite. With so many varieties of gluten-free flours available to use in pasta dough, once you learn the basic steps of pasta-making, you will be able to produce amazingly creative pasta dishes using only gluten-free flour of your choice, and eggs. Everyone who attends this class will have a chance to use a pasta machine to make gluten-free fettuccini and ravioli. In addition to sampling the pastas we learn how to make during this class, everyone will receive a handout with class notes and pasta recipes. (I am currently scheduling fall classes. More people than ever are removing gluten from their diets, and manufacturers in the food industry are responding to this increased demand for gluten-free products. Following a gluten-free diet is easier now than ever. Many gluten-free processed foods contain undesirable ingredients, however, and hidden glutens in processed foods are still ubiquitous, Moreover, for people with certain health conditions that require they follow a strict gluten-free diet, even the kitchens of friends and relatives pose a risk though cross-contamination of gluten-free items with those containing gluten. In this class, you will learn to identify hidden glutens on product labels, identify unhealthy ingredients in commercial gluten-free products, and avoid cross-contamination in restaurants, as well as in the kitchens of friends and family. Additionally, you will learn the basics of gluten-free baking, including the function of various types of flours and starches in baked goods.
