Hello! I’m Teresa. Welcome to my blog! I’m so happy you dropped by! If you are reading this page about me, you are most likely someone who eats gluten-free, or perhaps you have someone in your life who has to eat gluten-free. I’ve had to eat gluten-free since I was diagnosed with celiac disease in 2006, and this blog is a result of the change this diagnosis brought about in my life, and in my family’s life as well.
Since my celiac diagnosis, we have found that two of our children also suffer from celiac disease, so I have additional motivation for learning how to prepare, as well as find, delicious gluten-free food. Although going gluten-free is often complicated and inconvenient, I found that my delight in, and practice of, cooking from scratch pre-diagnosis greatly helped my family’s transition to a gluten-free diet. I simply apply what I’ve learned from a lifetime of cooking and baking with gluten to cooking and baking without gluten, but with the necessary adjustments (and, of course, a great deal of research and experimentation).
Like most (and probably ALL) people who have celiac disease, I prefer not to be entirely defined by my gluten-free lifestyle. My husband Phillip and I spend time between our homes in San Antonio (where Phillip practices pharmacy) and Austin, where I teach gluten-free cooking classes, give private gluten-free cooking lessons, and spend time with our children and our five grandsons. No matter where we are or what our plans, we give God first place in our daily lives. We spend every morning building and maintaining our relationship with God through reading scripture as well as books of spiritual growth and enrichment, and of course, time in prayer and contemplation. We attend St Matthew’s in San Antonio, St Mary’s in Austin.
Cleo, our hyper-diligent Anatolian Shepherd / Great Pyrenees mix and Kolbe, our rascally Brussel’s Griffon-mix (rescued July 5th, 2017), travel up and down I-35 with us. They love to romp and play with our grandsons.
When we’re not working or playing with our grandchildren, Phillip and I are running. I enjoy the freedom of running barefoot (but Phillip runs in shoes). I set two running goals for the year 2015: to run 2015 miles for the year, and to run every day of the year. I ran 2042 miles for the year, and I did, indeed, run every single day of 2015. My streak continued through 2016 (with 2112 miles for the year), and 2017 (with 2300 miles completed for the year).I am a member of the United States Running Streak Association; the other members of the association, with their perseverance and dedication, are my inspiration. My running goals for 2018 are to continue my streak of daily running, and to equal the amount of miles I ran in 2017.
And of course, when I’m not working and running, I’m in the kitchen cooking, baking, researching, and experimenting, in order to create delectable gluten-free treats and healthy meals for my family. I am a recipe tester, as well as a recipe developer and food writer. Food contains a spiritual element; a dish made with the most pure, wholesome, minimally processed ingredients, that pleases the palate as well as the stomach, mind, and soul, becomes much more than just a means to ingest calories and gain nutrition.
